Tajine
Aromatic stew found in the North African countries of Algeria, Morocco,
and Tunisia that is named after the pot in which is is cooked. Tajine
is sometimes spelled Tagine. The stews are often made with chicken
or lamb and they often include a combination of sweet and savory ingredients
such as olives, prunes, dates, nuts, raisins,

Ugali
A dish usually made with finely ground white cornmeal, but
sometimes with other grains, that I would describe
as something between a polenta and a porriate. It is usually
served with a meat stew or a stew featuring greens or other vegetable.
It is usually eaten with the hands. Diners roll the ugali into a
small ball, make a thumb print in the ball, and use it to scoop up
bite-size portions of the stew.
